By 9 BBY, Boba Fett is already a famed and powerful bounty hunter, and after the events of Jedi: Fallen Order, it's not hard to imagine that Cal and friends would have hefty bounties on them.
Fallen Order is by far the superior game. I think the saber combat of FO is way more accurate to how it works in the rest of Star Wars canon. I played Force Unleashed when it came out, but I always disliked the lightsaber combat. For me, this is the most important part of any Jedi-themed game, and Fallen Order really nails it.

Was a bit of a chore to platinum, but as far as Star Wars games go, it's one of the better ones, IMO. There's LOADS of room for improvement in a potential sequel. First up should be doing something about the 3D map. Taking inspiration from Metroid Prime is fine, but some of the locations' maps wind up looking like SW holo-blue spaghetti after a25oe.
